Mornings are a bit crazy in my home. While Harold and Alexandra are early risers, Olivia and I are not the most functional when we awake. And even though Alexandra gets up bright eyed and bushy tailed, staging a battle between her Captain America and Wonder Woman action figures is more interesting than getting dressed and brushing teeth. Many days we are rushing out the door with only minutes to spare to make it to school on time. This makes it hard to get a decent and reasonably nutritious breakfast. And with super kids – super smart and super active – fueling their brains and their bodies properly is a must.

But I am not a meal prepper. And we often don’t have time to sit down and eat. While I love planning, our schedule changes from week to week depending on where Alexandra will run or Olivia will speak. Picking the same day to do all my cooking, planning and prepping doesn’t work for us. I am also not a recipe creator-creative-meal prep-crafty-fun-foods mom. I envy fancy bakers, but my kids have never cared if their cookies look like bunnies because they don’t last long enough for them to notice. So I was forced to find something quick and portable that wasn’t filled with sugar or artificial ingredients.

We are also a food allergy family, and mine are the most severe. After reading label after label only to find our allergens present I realized that I needed healthier, homemade breakfast choices everyone in the family could grab and go on the way out the door. Mom has to eat too, right? The following are my family’s favorite homemade grab and go breakfast choices.

Grab & Go Breakfast: Muffins

Someone once said that a cupcake is a muffin that believed in miracles. I ‘m guessing that person never had an active child hyped up off icing. But muffins are a go to favorite for my family. You can usually make 10 -12 muffins per pre-packaged box. Or you can always make them from scratch…but I can’t help you with that. 😉 My family loves the Baker’s Corner Blueberry, Apple Cinnamon and Double Chocolate variety from Aldi. Even if they grab two at a time, we have muffins for three days or so each week.

Grab & Go Breakfast: Hard Boiled Eggs

Nutritionists do not seem to be able to agree whether or not eggs should be considered a superfood. Either way, hard boiled eggs are good for more than just Easter baskets. Boil as many eggs as you like on the stove top or get a nifty appliance that allows you to set it and forget it like the Dash Go Rapid Egg Cooker. Store them in a covered container or your entire kitchen will smell like eggs every time you open the refrigerator.  You can peel them before you put them away to save more time on the go, however, you will have to wait for them to cool and I usually just slide them in the fridge with the shells on.

PRO TIP: Cover your boiled eggs with ice water for at least 10 minutes to stop the cooking process and make peeling the shells off a breeze.

Grab & Go Breakfast: Sausage Biscuits

Who needs McDonald’s? For about the price of a Sausage Biscuit Value Meal you can feed your whole family sausage biscuits from home.  With one can of quick rise biscuits and a roll of sausage (turkey sausage for a healthier option), you can make around 8 sausage biscuits. Fry up the sausage and plop the biscuits in the oven and in 15 minutes you’ve got breakfast. I usually cooked the sausage on my Geroge Foreman Grill to reduce fat and crisp the sausage edges. It also allows me to set it and forget it…at least for a few minutes. Reheat for a few seconds in the microwave each morning and head out the door.

MIX IT UP: For an added boost to your sausage biscuit, add a one-half slice of cheese before warming. You can also slice one of the hard boiled eggs and add the middle slices with the yolk to your sandwich for a fried egg taste.

Grab & Go Breakfast: Fresh Fruit Bowl

Even though this option requires containers, they don’t have to be pretty or fancy. And it’s the simplest of all to prep. Pick up your favorite fruits. Peel, slice, cube or scoop them into individual bowls and voila. My family particularly likes cantaloupe and watermelon. If you absolutely must, grab a fork to take along with you.

These grab & go breakfast items were all made in my own kitchen from foods purchased at my local Aldi. I spent a grand total of less than $10. Quick, portable, homemade and for less? It’s a win-win, right? How do you plan to make grab & go breakfast choices a part of your morning routine?
